Satake Cutlery Santoku knife with blast finish
Since the company was founded in 1947 by Yasukichi Satake and Yoshiro Satake, they have continued to innovate their technology and create products that are in line with the times, striving to create better blades. “SATAKE CUTLERY MFG.Co.,Ltd.” is specialized in manufacturing high quality kitchen tools. This knife was obtained during the Seki Outdoor Knife Festival. The brushed pattern on the blade that follows the shinogi line in combination with the Laminated wood handle made for a great looking knife at a nice price point. There are visible scratches on the back of the knife, which is why it is discounted. According to google: Molybdenum and vanadium steel is an alloy that combines molybdenum, vanadium, and stainless steel to create a material with excellent strength, toughness, and edge retention. Molybdenum increases hardness and toughness, while vanadium improves wear resistance, strength, and toughness by forming stable carbides. I picked up a knife with Molybdenum steel during my first trip to Japan in Kappabashi street. I would say it's pretty similar to my VG10 knife in terms of edge retention, but it is a easier to sharpen (less time spent). This is a great knife for someone looking to dip their toe into the Japanese knife world.

Tadashi Enami is a fifth-generation master craftsman. He uses traditional forging techniques and produces his own brand of knives that are quite hard to find anywhere outside of Japan. Enami-san was quite a pleasure to meet. Despite the communication barrier, I could tell that he was full of life and probably had a lot of stories to share if you are lucky enough to be able to share a beer or meal with him some time. When I visited him, he was hammering away on some knives. He has an assistant who was able to speak English and filled me in on Enami-san's process. After a little while, they brought out their supply of knives and I was instantly attracted to two of his Kiritsuke Petty knives. I ultimately ended up with this one because I liked the handle better.

He even sharpened my project knife when I took it out to show him and ask him about it. I believe he gets a lot of his inspiration for his knife shapes from his own cooking experiences.
