San-etsu Hamono Damascus Petty

Seki City is located in Gifu prefecture ,north of Nagoya.This area has been a center of KATANA sword production since the 13th century, but is now better know for its production of stainless type knives, high-quality pocket knives, scissors, and nail clippers. The blue handle is quite striking, which was what attracted me to it in the first place. It is made of carbon fiber-like composite material with a white spacer. Unfortunately, the seller was unable to relay the exact material the handle is made up of. This blade is beautifully constructed with a blade geometry in between a laser profile and a midweight profile. The material is SG2 which is a great stainless steel material. It is highly resistant to corrosion (rust) and has great edge retention properties. The cladding line is striking where the damascus pattern ends.

The handle on this knife is beautifully constructed with magnolia wood handle and a white spacer. The combination of the handle and clean look on the blade is a great pairing. The blade geometry leans middle weight. It is constructed out of VG10 steel which is a stainless steel that is highly resistant to corrosion (rust) and good edge retention (depending on the forging process). My first Japanese knife was made out of VG10 and it's still heavily in use, so I have no complaints. The finish on the knife is clean, with vertical brushing and a smooth kasumi finish closer to the edge.

Since the company was founded in 1947 by Yasukichi Satake and Yoshiro Satake, they have continued to innovate their technology and create products that are in line with the times, striving to create better blades. “SATAKE CUTLERY MFG.Co.,Ltd.” is specialized in manufacturing high quality kitchen tools. This knife was obtained during the Seki Outdoor Knife Festival. The brushed pattern on the blade that follows the shinogi line in combination with the Laminated wood handle made for a great looking knife at a nice price point. There are visible scratches on the back of the knife, which is why it is discounted. According to google: Molybdenum and vanadium steel is an alloy that combines molybdenum, vanadium, and stainless steel to create a material with excellent strength, toughness, and edge retention. Molybdenum increases hardness and toughness, while vanadium improves wear resistance, strength, and toughness by forming stable carbides. I picked up a knife with Molybdenum steel during my first trip to Japan in Kappabashi street. I would say it's pretty similar to my VG10 knife in terms of edge retention, but it is a easier to sharpen (less time spent). This is a great knife for someone looking to dip their toe into the Japanese knife world.
